Mini Mealtime Monday: Crock Pot Cashew Chicken

A few weeks ago, I shared a slow cooker recipe for sweet and sour meatballs– a great way to enjoy a home-cooked meal without the muss and fuss of following complicated cooking steps. Here’s another recipe for the crock pot fans out there. If you’re working on fitness goals this summer, as I am, it’s is the perfect way to get that extra, energizing dose of protein. This hearty cashew chicken is positively packed with it! Your muscles will thank you.

There are a lot of boring crock pot recipes out there, but this isn’t one of them. Vinegar, ketchup, and soy sauce combine to give this dish a nice kick. In its marinade, the chicken cooks to the perfect tender texture. It’s best enjoyed with rice, which soaks up the flavor of all that sauce.

Crock Pot Cashew Chicken

Ingredients

1 lb boneless & skinless chicken breast tenders

1/4 cup cashews

1/s garlic clove, minced

2 T rice wine vinegar

1 T brown sugar

1/2 T canola oil

½ t grated fresh ginger

1/8 cup all purpose flour

1/4 cup soy sauce

1/2 t black pepper

1/8 tsp red pepper flakes

2 T ketchup
