Mini Mealtime Monday: Chicken Burgers with a Surprise Inside

I love surprises. Whether they’re thoughtful, out-or-the-blue gifts or spontaneous outings, there’s nothing like the unexpected to add zest to everyday life.

It’s easy to a bring dose of serendipity into the kitchen. You can make muffins with surprise fillings or cookies with fortunes stuffed inside. Or you can make these chicken burgers, which look like ordinary patties but burst with feta flavor. You can whip them up in a matter of minutes. If you’re sharing this meal with someone else, don’t tell them there’s cheese inside.

A friend sent this light, healthy recipe to me via Weight Watchers. Don’t let the diet label scare you- it’s delicious! The burgers are best served with a Greek salad on the side- also a good way to use up the leftover lettuce, feta cheese, and olives. If your appetite is hearty, feel free to supplement with dessert.

Feta-Stuffed Chicken Burgers

Adapted from Weight Watchers

Ingredients

½ lb uncooked ground chicken breast
½ T oregano
A dash of garlic powder
3 ½ T feta cheese, crumbled
2 hamburger buns or 4 slices of bread
½ cup romaine lettuce, cut into thick strips
2 roasted red pepper slices
2 tsp sliced black olives
